Here is what I am having for dinner!! Fresh sourdough bread and my sister-in-law's corn soup recipe.
1 tbsp butter (I am vegan so I used a non-dairy "butter")
1 clove garlic
1 small onion
1 can tomatoes (drain them if you like a chunkier thicker soup)
4 cups veggie broth (or chicken if you prefer)
1/2 tsp salt
1/2 tsp oregano
2 1/2 cups frozen corn
1/4 cup coffee cream (omit if you are vegan like me!)
Saute onions and garlic in butter until soft. Add broth, oregano, tomatoes, salt and 2 cups of the corn. I add all these ingredients to a slow cooker. Puree the whole mixture (I use my cuisinart smart stick right in the slow cooker). Add remaining corn. Simmer whole mixutre 30 minutes (or set slow cooker to low and warm). Add cream, if using, heat and serve.
